Ingredients

  • 4 boneless, skinless chicken breasts – Choose evenly sized pieces for even cooking.

  • 2 cups fresh spinach, chopped – Adds color, nutrients, and a mild earthy flavor.

  • ½ cup dried cranberries – Provides a subtle sweetness that balances the savory filling.

  • ¾ cup cream cheese, softened – Creates that irresistibly creamy texture.

  • ½ cup shredded mozzarella or provolone cheese – Melts beautifully and complements spinach and chicken.

  • 2 cloves garlic, minced – Adds aromatic depth.

  • 1 tablespoon olive oil – For sautéing and moisture.

  • ½ teaspoon salt – Enhances all flavors.

  • ½ teaspoon black pepper

  • ½ teaspoon paprika – Adds warmth and subtle color.

  • ½ teaspoon Italian seasoning – Brings a classic herb note.


Instructions

  • Prepare the filling
    Heat olive oil in a skillet over medium heat. Add garlic and sauté until fragrant. Stir in spinach and cook just until wilted. Remove from heat and let cool slightly.

  • Mix the creamy filling
    In a bowl, combine cream cheese, mozzarella, cooked spinach, dried cranberries, salt, pepper, and Italian seasoning. Mix until smooth and evenly combined.

  • Prepare the chicken breasts
    Using a sharp knife, carefully cut a pocket into each chicken breast without slicing all the way through. Season the chicken with paprika, salt, and pepper.

  • Stuff the chicken
    Spoon the creamy spinach and cranberry mixture evenly into each pocket. Secure with toothpicks if needed.

  • Bake to perfection
    Place the stuffed chicken breasts in a greased baking dish. Cover loosely with foil and bake at 375°F (190°C) for 25 minutes, then uncover and bake another 10–15 minutes until the chicken is cooked through.
